Tofu waste is a blatant pollution in Indonesia. Having 84,000 tofu factories in proximity, each tofu industry produces an average of 20,000 million liters/year of liquid tofu waste (Sintawardani, 2011).
Tofu factories are inefficient, not only has there been a reduction in productivity, but the processes damages the environment (Ridha, 2015). In fact, every ton of tofu production produces around 3,000-5,000 liters liquid tofu waste (Agricultural Ministry of Indonesia, 2017). Consequently, abundant liquid tofu waste deteriorates aquatic environments severely lowering oxygen content and creates a foul odor to the community.
